Rum and cranberry cookies (vegan)

I baked cookies today, from my own recipe! Unfortunately I wasn’t naked, but it was cold and stuff. Here’s how to try my recipe too!
4oz soya margerine
4oz demerara sugar
150gs dark chocolate
A pinch of cinnamon
Four tbsp of golden syrup
A generous splash of rum
Four tbsp of cocoa powder
8oz plain flour
Two tsp baking powder
A handful of dried currants
A generous amount of cranberries
Preheat oven to gas mark 3/175degrees

Melt the marg, chocolate, syrup and sugar together in a saucepan until smooth then take off heat. Add the cinnamon, currants and rum whilst it cools. Then, mix in the cocoa, flour and baking powder and finish off with adding the cranberries and (if you want) some more chocolate chips. Grease three baking trays really really well, then roll the dough into balls and place on tray. Warning- the dough is very sticky! It will also spread a lot in the oven so place them quite far apart. Bake in the oven for 15-20 minutes and leave to cool on the trays before removing them onto wire racks.

The final cookies with be quite brittle so be careful, however they taste like heaven 🙂 feel free to mess around with the ingredients- i certainly do! I baked mine very rum heavy, just how I like them.
